Vegetable Bread
Ingredients Procedure
  • 3/4 cup liquid egg substitute
  • 1 cup vegetable oil
  • 2 cups brown sugar, firmly packed
  • 2 cups ground zucchini
  • 2 Tbsp vanilla extract
  • 3 cups whole wheat flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/4 tsp baking powder
  • 3 tsp cinnamon
  • 1 cup chopped nuts


  1. In a large bowl, combine zucchini, egg substitute, oil, brown sugar, and vanilla extract. Set aside.
  2. In a separate bowl, combine flour, baking soda, salt, baking powder, and cinnamon.
  3. Add the zucchini mixture.
  4. Stir until smooth.
  5. Add the nuts and fold them in.
  6. Pour the mixture into a loaf pan.
  7. Bake at 325°F for 75 minutes.
